Though, I rarely eat it. (I am a work in progress.) Well, I eat breakfast food, just very rarely at “breakfast time.” Always running around crazy getting all my kids ready for school and entertaining/chasing my little guy makes it difficult to sit and have a proper breakfast.
I really love making them beautiful breakfasts.
I think it starts the day off on such a great note. Don’t get me wrong; there are still days when they get cereal. I do try a few times a school week to make a wonderful, over-the-top breakfast, though.

However, as I have already mentioned, and if you read my blog regularly, you know I have a little 17-month-old son who LOVES destroying my house! So, these wonderful, over-the-top breakfasts MUST be very quick and easy to put together. I work with very small time frames. So this pumpkin pie french toast is perfect.
I whipped up this Pumpkin Pie recipe, which was a HUGE hit!!
Eggs Bread Milk Cinnamon Pumpkin Pie Spice
I put three eggs in a bowl with about a half cup of milk, a dash of cinnamon, and a sprinkle of pumpkin pie spice, and ta-da! Soak the bread and place it in the frying pan.
It only takes a few minutes to cook it, and because I make breakfast while the kids are still sleeping in the morning, I put the French toast on a baking sheet and put it in the oven at 200 degrees so that the toast stays nice and warm for them.
When it was time to serve it, I cut it in four, topped it with nutty granola, and drizzled it with caramel sauce. YUM!
My kids all gobbled it up! It is not often all 3 LOVE the same thing!!
